Colombia has long been known as a producer of some incredibly flavoursome and well-rounded offerings. Carlos Matiz Salamanca and his family produce one of the country's finest decaffeinated brews. After the coffee is harvested, the decaffeination process takes place using ethel-acetate, a 100% natural by-product of fermented sugar-cane, which bonds with the soluble caffeine compounds in the coffee and allows them to be stripped from the green beans. Impressive stuff!
